Lyon Bugnes without Lactose

The Lyon bugnes are fried sweet treats made from leavened dough typical of the city of Lyon, prepared for Carnival. Their texture is similar to doughnuts, but their uniqueness lies in their shape, diamond-shaped dough twisted onto itself. They are served with honey and pistachio crumbs. Lyon bugnes are as soft as doughnuts and very simple and quick to prepare since there’s no need to wait for a second rise after shaping, but they can be fried immediately. Additionally, you can prepare them late in the afternoon and fry them the following morning by letting the dough rest in the fridge overnight after the first rise. My version is lactose-free with plant-based ingredients, but they can also be made with regular milk and butter.

Ingredients

  • 4 cups Manitoba flour
  • 1/4 cup sugar
  • 1 tbsp honey
  • 2 tsp salt
  • 3 large eggs
  • 2 tsp fresh yeast
  • 2/3 cup almond milk
  • 3/4 cup sunflower seed oil
  • 1 lemon
  • 4 1/4 cups peanut oil

Tools

  • 1 Mixer
  • 1 Pot
  • 1 Bowl
  • 1 Pastry wheel

Steps

  • In the mixer bowl, add the flour, sugar, honey, lemon zest, and crumbled yeast.
    Add the milk and eggs.
    Knead until a smooth and homogeneous dough is obtained.
    Also add the salt and oil in increments until each portion is absorbed.
    Let it absorb well.
    Let the dough rise until it doubles in size.

    Deflate and refrigerate for an hour.
    Alternatively, you can leave it for 12 hours in the fridge, but in this case, 1 hour after rising.
    Take the dough out of the fridge either after one hour or after 12 hours and roll it out on a lightly floured surface. Thickness 1/5 inch.

    Heat the peanut oil to 356°F.
    Cut out diamonds and make a central cut.
    Widen the cut and, stretching the diamonds, twist the ends inside the cut and fry immediately.
    Drain on an absorbent paper sheet.
    Dust with powdered sugar or honey and pistachio crumbs before serving.
