The spelt apple cake is a simple and genuine cake, made with spelt flour, eggs and blended apple, sweetened with a little sugar and scented with cinnamon.

The peculiarity of this cake that makes it also very quick to make is that you can prepare it in a food processor, saving time and effort.
Of course, if you don’t have a food processor you can use a bowl and fork, following the same steps.
Needless to say, the apple cake immediately takes us to our most comfortable place, home, to cuddles and our loved ones.

Ingredients
- 1 1/4 cups apple (blended + another apple to garnish the surface as needed)
- 1/4 cup unrefined brown sugar (or white granulated sugar)
- 5 tbsps extra virgin olive oil
- 2 eggs
- 1 packet baking powder
- 2 1/4 cups spelt flour
- to taste lemon peel (grated)
- 1 pinch salt

Steps
Put the eggs, chopped apple (peeled or unpeeled, your choice), grated lemon peel, and sugar into the food processor.
Blend until you get a smooth and homogeneous mixture.
Add the extra virgin olive oil and blend again for a few seconds.
Add the spelt flour, a pinch of salt, cinnamon, and the sifted baking powder.
Blend briefly, just long enough to mix everything.
Pour the batter into an oiled and floured pan or lined with parchment paper.Garnish the surface with apple slices, enough to cover it all.
Bake in a static oven at 350°F for about 40 minutes, doing the toothpick test before removing from the oven.
Let it cool and, if you like, finish with a sprinkle of cinnamon or powdered sugar.
Storage of the Spelt Apple Cake
If it’s cool, store the cake under a cake dome or in an airtight container for 2–3 days. It will remain soft thanks to the blended apple.
In the fridge
If it’s warm or you prefer longer storage, you can put it in the fridge, always well covered.
It keeps for 4–5 days. Before serving, take it out 15–20 minutes in advance: it will become softer and more fragrant.
