It’s the simplest dessert in the world: it can be made in exactly one minute, no need for a stand mixer or electric mixer, just a bowl and a hand whisk are enough. The result? An incredible cloud of softness that smells like home. It’s the perfect cake for a last-minute breakfast or an impromptu snack that will make everyone happy. Come with me, let’s start baking.

Ingredients for Soft Cake in One Minute
- 1 2/3 cups all-purpose flour
- 1/3 cup granulated sugar (I used whole cane sugar)
- 1/3 cup vegetable oil
- 1/4 cup milk
- 1/2 cup water
- 1 tbsp baking powder
- 1 packet vanillin
Steps for Soft Cake in One Minute
In a bowl, start by mixing the eggs at room temperature with the sugar (if you notice a darker color, it’s because I chose to use whole cane sugar).
Then pour in the milk, the oil, and the water, continuing to mix with a hand whisk. Finally, add the flour, baking powder, and vanillin, making sure to sift them beforehand to avoid lumps.Quickly combine everything with the whisk until you get a smooth mixture and pour it into a 8-9 inch mold previously buttered and floured.
Bake in a preheated static oven at 350°F for about 35 minutes.
If you prefer, you can use a larger mold: in this case, the cake will be slightly lower, so check the baking after 25 minutes by doing the classic toothpick test, as the times will change slightly.

Storage
This cake stays delicious for 3-4 days if stored correctly. The secret to keeping it from drying out is to place it under a glass cake dome or inside an airtight container, keeping it in a cool and dry place. If the season is very hot, you can also wrap it in plastic wrap to preserve its moisture.
