Pasta with Leeks, Bacon, and Gorgonzola

  • 1 leek
  • 11 oz mezze maniche rigate
  • 2 oz bacon
  • 3.5 oz gorgonzola
  • salt
  • 2 tablespoons olive oil

Steps: Pasta with Leeks, Bacon, and Gorgonzola

  • First, clean the leek: remove the outermost part if damaged and wash it under water. Remove the part with the roots and the tougher green end, then slice it into about half-inch thick pieces. Place the slices in a colander and rinse them thoroughly under water, separating them with your hands so any soil inside comes out, and let them drain in the colander.

    Heat the oil in a non-stick pan and sauté the bacon for a couple of minutes, then add the leeks.

    Meanwhile, bring salted water to a boil for the pasta and cook it for the time indicated on the package.

    Cook the leeks for about 10 minutes, stirring occasionally and adding a bit of water to prevent them from sticking to the pan. Finally, add a pinch of salt, the gorgonzola, and a little pasta cooking water.

    Drain the pasta, add it to the pan with the leeks, and toss. Divide onto plates and serve immediately.
