Ingredients
- 4 potatoes (about 1.5 lbs)
- 1 1/2 cups tomato puree
- 2 tbsps olive oil
- 1 pinch dried oregano
- 1 clove garlic
- salt
Steps: Stewed Potatoes
Start by peeling the potatoes, cut them into pieces and put a pot with salted water on the stove. Immediately add the potatoes to the water and cook them for about 5 minutes once the water boils, then drain them. The potatoes should remain slightly firm as they will finish cooking in the sauce.
Meanwhile, prepare the sauce by putting a drizzle of oil in the pan, sauté the garlic clove, then remove it and add the tomato puree.
Cover with a lid and let the sauce cook for 5 minutes, then adjust the salt and pepper, and add the potatoes. Cook, always with the lid on, until the potatoes are just right, add the oregano, then turn off the heat and serve.
