Cod meatballs in tomato sauce are a main course traditional in Italian cuisine, very simple and flavorful, combining the rich taste of cod with the sweetness of tomato sauce.
You can serve this dish with simple sides like boiled potatoes or roasted vegetables, but also with good rustic bread to scoop up the sauce. Cod meatballs are appreciated for being lighter than meat meatballs, yet just as tasty and flavorful.
The preparation is very simple: make a simple sauce, for the meatballs just blend everything in a mixer, and cook them directly in the sauce to best absorb the flavors.

Steps: Cod Meatballs in Tomato Sauce
First, prepare the sauce: chop the onion and let it sauté over low heat in a pan with the oil. After a couple of minutes, add the tomato puree and cover with the lid.
While the sauce is cooking, make the meatball mixture by cutting the stale bread into pieces. Place it in a bowl with the milk and let it soften for a few minutes.
Meanwhile, check that the cod fillet has no bones and, if present, also remove the skin. Place it in a blender or food processor along with the egg, squeezed bread, parsley, and season with salt.
Blend until you get a homogeneous mixture, then form the meatballs.
Drop the cod meatballs into the hot sauce and cook them for 15 minutes. Check the cooking and adjust the salt, then place them on the serving dish and serve.
