Pasta and Peas with Ham

Pasta and peas with ham, a typical dish of Italian tradition, simple to prepare with few ingredients. A first course that is midway between a soup and dry pasta, similar to pasta and lentils, and you can have it on the table in just half an hour.

You can prepare this dish with either fresh peas, if they’re in season, or frozen ones, as they are available all year round.

This is a first course that often saves my dinner plans, as it suits the taste of the whole family, and now that temperatures have dropped, a good bowl of soup is very welcome.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • Half onion
  • 3.5 oz cooked ham (diced)
  • 2.5 cups frozen peas
  • 3 cups water
  • 1 broth cube
  • 12 oz ditalini pasta
  • salt
  • 1 oz Grana Padano DOP

Steps: Pasta and Peas with Ham

  • Heat the oil in a pot and add the chopped onion, then sauté for a couple of minutes on low heat.

    Now add the diced ham and peas, let them flavor for a couple of minutes, and cover with water and the broth cube, or with some broth.

    Raise the heat and, when it reaches a boil, add the ditalini and cook for the time indicated on the package.

    Check the cooking, if necessary adjust salt and divide into plates, add a sprinkle of grated cheese and serve.

  • Put the cheese in the jug and grate for 10 sec./speed 10, then transfer it to a bowl and set aside to finish the dish.

    Now put the extra virgin olive oil in the jug and heat for 1 min./250°F/speed 1, then add the onion and chop: 7 sec./speed 7.

    Gather at the bottom with the spatula, then add the diced ham and let it flavor for 4 min./210°F/speed 1.

    At this point, also add the peas, water, and the broth cube and bring to a boil: 10 min./210°F/speed 1.

    Now add the pasta and cook for the time indicated on the package /210°F/Reverse/speed 1.

    Check the cooking, if necessary adjust salt and divide into plates, add a sprinkle of grated cheese and serve.
