Salmon and Avocado Crostini

Salmon and avocado crostini, an original and tasty appetizer, to be served cold and perfect for summer. These crostini are the ideal appetizer that will surprise your guests. They are perfect to start a fish-based dinner, but not only: you can also serve them at a buffet.

The important thing for the success of these crostini is to use an avocado at the right degree of ripeness: it should be slightly soft when you touch it, like a peach. If you also like avocado, you know that the combination with salmon is amazing. I often use it in poke bowls and in salmon and avocado cream burgers.

For this recipe, I used a baguette, but any type of bread you like is fine. If you prefer, you can also use crostini or simple untoasted bread.

Steps: Salmon and Avocado Crostini

  • First, slice the bread, toast it on a griddle, and set it aside.

    Cut the avocado in half, remove the pit, and scoop out the flesh. Place it in a bowl and mash it with a fork. Add the lemon juice, salt, and mix until creamy.

    Spread a little cream on each slice of bread and place a piece of smoked salmon on top. Finally, add some sesame seeds and finish all the crostini. Serve immediately.

FAQ

  • Can I prepare the crostini in advance?

    Yes, but I recommend preparing the cream and storing it in the fridge. When needed, mix it well since avocado tends to oxidize on the surface and turns dark, and fill the bread slices just before serving.
