BIMBY Eggplant Meatballs in Air Fryer

BIMBY Eggplant Meatballs in Air Fryer, a light main course perfect for summer that you can eat at room temperature. This recipe is very quick to make, you can even cook the eggplants the day before to have them ready, and cooking in the air fryer will save you time because it is much faster than the oven.

Another advantage of the air fryer is that it doesn’t heat the environment as much as the oven, which is not trivial this time of the year. Obviously, if you prefer, you can cook the eggplant meatballs in the oven; at the end of the recipe, you will find instructions for both cooking methods.

You can serve these meatballs with Yogurt Sauce, which is very fresh and quick to prepare.

Ingredients

  • 1 eggplant (large)
  • 4 leaves basil
  • 1 egg
  • 5 tablespoons breadcrumbs
  • 2 tablespoons Grana Padano cheese, grated
  • garlic powder
  • extra virgin olive oil
  • salt
  • pepper

Steps: BIMBY Eggplant Meatballs in Air Fryer

  • Wash the eggplant, dry it, and pierce the surface with the tip of a knife. Cook it in the air fryer for 15 minutes at 374°F, then turn it and cook for another 5 minutes (or in the oven for 50 minutes at 374°F). Place the eggplant on a plate, remove the stem, and cut it in half.

  • Using a spoon, remove the pulp and discard the skin.

  • Coarsely chop the eggplant with a knife.

  • Put the basil and eggplant pulp in the Bimby bowl and chop for 10 seconds at speed 6.

  • Add the egg, grated cheese, 4 tablespoons of breadcrumbs, salt and pepper, a pinch of garlic powder, and mix for 30 seconds at speed 3.

  • Remove the measuring cup and add the rest of the breadcrumbs if it is too soft. The amount may vary depending on the moisture of the eggplant pulp.

  • You should obtain a workable, rather firm mixture.

  • Take a bit of dough and roll it between your hands to form the meatballs.

  • Place them on a plate and, once you’ve made them all, add a drizzle of oil.

  • Roll them again so they are nicely oiled all around, and place them in the air fryer.

  • Cook them at 356°F for 15 minutes, then turn them and continue cooking for another 5 minutes.
    If you prefer, you can bake them in a preheated oven at 392°F for 20 minutes. Once cooked, place them on a plate and let them cool slightly before serving.
