Ingredients

  • 7 oz couscous
  • 7 oz water
  • 3.5 oz Genovese pesto
  • 9 oz Buffalo Mozzarella (bites)
  • 9 oz cherry tomatoes
  • salt

Steps: Couscous with Pesto, Cherry Tomatoes and Buffalo Mozzarella Bites

  • First, put the couscous in a large bowl, add the salt, and pour the boiling water over it. I usually use the same weight of water and couscous, but follow the cooking instructions on the box. Cover with a plate and let it rest for 5 minutes.

    Meanwhile, quarter the cherry tomatoes and halve the buffalo mozzarella bites.
    When the couscous is ready, fluff it with a fork, add the pesto (leaving aside a tablespoon) and mix to combine.

    Finally, add the cherry tomatoes and mozzarella bites, mix again, and plate, finishing with a few drops of pesto.

FAQ

  • I don’t like buffalo mozzarella, what can I use instead?

    You can replace it with fiordilatte mozzarella.
