- 1 roll shortcrust pastry
- 3.5 oz diced speck
- 3.5 oz latteria cheese (or scamorza)
- 1 egg

Steps for Savory Zucchini Pie in Air Fryer
Slice the zucchini thinly (I used the mandoline) and cook them in a pan with a drizzle of olive oil and a pinch of chopped parsley for about 5 minutes, stirring occasionally. Then, season with salt.
Transfer the zucchini to a plate and, once cooled, add a beaten egg and the speck.
Mix well to combine everything.
Unroll the shortcrust pastry, place it in a baking tin with parchment paper, and pour in the filling.
Add the cheese cubes, then fold the edges inward.
Trim the excess parchment paper and place the pie in the air fryer. Cook for 25-30 minutes at 320°F, then check the cooking. Once it’s golden, remove it from the fryer and let it rest for a few minutes before serving.
