Grilled Zucchini

Steps for Grilled Zucchini

  • First, wash the zucchini, dry them, and remove the ends. Slice them lengthwise all to the same thickness; I used a mandoline for this.

    Heat a grill on the stove, and when it’s hot, place the zucchini without overlapping. If you slice them slightly thick like mine, there’s no need to add oil, but if you prefer them very thin, I recommend brushing the grill to prevent sticking.

  • Cook them over medium-low heat, then flip them and continue cooking on the other side. There’s no precise time as it all depends on the thickness of the zucchini: I lift one to check, and when I see dark grill marks, I flip them. As they are ready, place them on a plate and let them cool.

  • Season the grilled zucchini with salt, a sprinkle of pepper, and extra virgin olive oil, put them in the refrigerator, and serve at room temperature.

  • Can I use an electric grill?

    Yes, certainly. Heat it to the highest setting before placing the zucchini.
