Ingredients
- 10.5 oz onions
- 1.75 oz emmental
- 1 tbsp olive oil
- vegetable broth
- 1 tbsp flour
- 1 tbsp butter
- salt
- pepper
- 4 slices bread
Preparation of Cheese Onion Soup
Slice the onions and sauté them well in a pan with the oil and butter for 10 minutes. Add the flour, broth, and cook for about 25 minutes, stirring occasionally and ensuring the broth doesn’t dry up; if it does, add more.
Meanwhile, grate the cheese: set some aside to garnish the dishes and divide the rest over the slices of bread that you have cut in half.
Toast the bread with the cheese in the oven or in an air fryer for a few minutes.
When the soup is ready, you can blend it with an immersion blender, as I did, or leave it as it is. Divide into plates, add a couple of slices of toasted bread, and finish with the cheese set aside.
