Homemade Romagna Flatbread – Made at Home

Romagna flatbread is one of the most beloved delights of Italian cuisine, and when it’s homemade, it’s even better! This thin and soft bread, typical of Romagna, is perfect for being filled with a variety of ingredients: from cured meats to cheeses, to vegetables and sauces.

Making it at home is simple and quick. It’s perfect for many fillings: you’ll be spoiled for choice. Whether it’s ham and cheese, grilled vegetables, or a fresh salad with tomatoes and mozzarella, the Romagna flatbread will be a success on any occasion.

After making the dough, divide it and roll out a flatbread. While cooking it in the pan for a couple of minutes, roll out another one. Continue like this until the end, and set aside your flatbreads. At dinner time, proceed as you would with ready-made ones: heat and fill them. Of course, you’ll taste the difference: they are delicious!!!

Ingredients

  • 4 cups all-purpose flour
  • 1 cup water (lukewarm)
  • 1.8 oz lard
  • 1 pinch baking soda
  • 1.4 tsp salt

Preparation of Homemade Romagna Flatbread

  • Pour the flour, salt, and lard into a bowl and work with your hands. Add the water and continue kneading in the bowl, then transfer the dough to the work surface. Keep kneading until you get a smooth dough. Then divide it into 6 equal pieces, make balls, and let them rest for 30 minutes, covered with a cloth.

    Heat a pan. Meanwhile, take the first ball and flatten it with your hands on a floured surface, then roll it out with a rolling pin to a thickness of about 1/8 inch and proceed with the others.

    Cook one flatbread at a time for about two minutes on each side, until bubbles form on the surface and they become golden.

    Place the flatbreads on a plate one on top of the other and fill them.

Tip

If you are already experienced, you can roll out one flatbread while another is cooking. When the first flatbread is cooked, cook the second while rolling out the third, and so on.
