Rice and Savoy Cabbage Fritters

The Rice and Savoy Cabbage Fritters can be considered a recycling dish. Got some leftover risotto? Use it for these fritters. Have some zucchinis? Ingredients for Rice and Savoy Cabbage Fritters

  • 1 cup parboiled rice, cooked, boiled (or 3/4 cup of uncooked rice)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 cup all-purpose flour
  • Half white onion
  • 6 leaves Savoy cabbage
  • 1 vine tomato
  • to taste salt
  • 1 pinch black pepper
  • as needed peanut oil (for frying)

Steps

  • First, if you don’t have cooked rice, boil 3/4 cup of rice in plenty of lightly salted water for the time indicated on the package.

    Drain it and set it aside.

  • Chop the onion finely and sauté it in a pan with a little oil until it becomes transparent.

  • Meanwhile, cut the cabbage leaves into strips then add them to the sautéed onion and cook until tender.

    Season with salt and pepper.

  • Combine in a bowl the rice, cabbage, Parmesan, and egg, and mix everything together. Season with salt and pepper, and if you like, add some chopped parsley.

  • Finally, chop the tomato into small pieces, removing the seeds, and mix again to combine.

  • Heat the oil for frying in a deep skillet, then take a generous spoonful of the mixture and fry the cabbage and rice fritters a few at a time.

  • Turn them when golden on one side, using a slotted spoon, then drain them on absorbent paper.

  • Rice fritters are perfect accompanied by some yogurt sauce or even some homemade mayonnaise.

Storage, Tips, and Variations for Rice and Savoy Cabbage Fritters

You can store them in an airtight container in the refrigerator for 2 days.

You can use the type of rice you prefer, even leftover risotto works perfectly.

Use the vegetables you like best according to the season, even steamed ones like broccoli or cauliflower, or sautéed zucchinis.
