Vegetable Broth Cube without Mushrooms Bimby, an incredibly simple base recipe you’ll use in countless preparations: broths, risottos, soups, stews, stir-fried vegetables, and many other dishes.
I’ve had the Bimby for less than a week, but I’ve already used it for many preparations: starters, mains, desserts… I must say I didn’t think it would be so useful in the kitchen, it really simplifies things, both for those who don’t like cooking and for those, like me, who have a passion for cooking.
This recipe is the first one I’m publishing because it can be interesting for many people and it really takes little time to prepare. Just put the cube in a glass jar and store it in the fridge or freezer: thanks to the salt in the preparation, it won’t freeze, so you can take a spoonful of the amount you need and use it in your dishes.
The classic recipe for vegetable broth cubes with the Bimby also contains mushrooms, but in this version, I decided not to include them.

Ingredients
- 2 cups carrots
- 1 3/4 cups celery
- 1 cup onions
- 1 cup tomatoes
- 2 cups zucchini
- 1 clove garlic
- 4 sprigs parsley
- 1 leaf bay leaf
- 1/3 cup Grana Padano DOP
- 1/2 cup coarse salt
- 2 tbsps white wine (or water)
- 1 tbsp olive oil

How to Prepare the Vegetable Broth Cube without Mushrooms Bimby
Put the cheese in the mixing bowl and grate: 10 sec./speed 10, then place it in a bowl and set aside, you’ll need it at the end of the recipe.
Place all the chopped vegetables, garlic, bay leaf, and parsley in the mixing bowl, chop: 10 sec./speed 7.
Gather at the bottom with the spatula, then add the coarse salt, white wine (or water), and oil.
Place the basket on top of the lid instead of the measuring cup to avoid splashes and cook for 25 minutes/Varoma/speed 2.
The mixture should be quite thick, if not, cook for another 5 minutes.
Now add the grated cheese set aside, close with the measuring cup and blend for 1 minute/speed 7, gradually increasing the speed.
Transfer the vegetable broth cube into a glass jar with a lid and let it cool before closing and storing in the refrigerator.
Notes
One teaspoon of homemade broth cube equals one ready-made cube, use a heaped teaspoon for 500 grams of water.

How long does it last?
You can store the broth cube in the refrigerator for 3 months or in the freezer for no more than 6 months.
Can I change the vegetables?
Sure, you can substitute them with the vegetables you have available, but keep a base of celery, carrot, and onion.
