Pork loin slices are a main dish that is simple and inexpensive, which becomes very tasty with the addition of spinach and cheese. It’s a leftover-friendly recipe that the whole family enjoys; in fact, I created it to make both the meat and the leftover spinach from the day before more appealing.
I’ve already prepared similar dishes, like the Pizza-Flavored Chicken Breast which was a great success. So here I try again with this recipe and once again I manage to get my son to eat meat slices (which he doesn’t particularly like).

- 4 slices pork loin
- 2 tablespoons flour
- 3.5 oz edam cheese
- 5.3 oz spinach
- extra virgin olive oil

How to Prepare Pork Loin Slices with Spinach and Cheese
Put a drizzle of oil in a pan and sauté the spinach for 5 minutes, then season with salt and set aside.
Flour the meat and brown it on both sides in a pan with a drizzle of oil for a few minutes. Salt the slices and cover them with the spinach, then add the diced cheese and cover with a lid.
Continue cooking over low heat until the cheese has melted. Serve immediately.

What cheese can I use instead of Edam?
You can replace it with a soft cheese that melts: mild scamorza, latteria, emmental, or asiago work great.
Can I use another type of meat?
Of course, you can replace the pork with chicken or beef slices.
