Baked pasta with speck and gorgonzola, a very flavorful but also simple dish to prepare either in the oven or in an air fryer, as I did.
Gorgonzola béchamel is easy to make, but if you really don’t feel like it, you can heat the ready-made one and add the zola as in the recipe. However, I recommend making it at home because it’s much better than the one you buy at the supermarket!

- 6 oz penne rigate
- 1 oz gorgonzola
- 1.5 oz diced speck
- 2 tbsps grated Grana Padano

- 2 tbsps butter
- 3 tbsps flour
- 1.5 oz gorgonzola

How to prepare Baked Pasta with Speck and Gorgonzola
First, prepare the gorgonzola béchamel: melt the butter in a saucepan and heat the milk separately. When the butter is melted, add the flour all at once and stir quickly with a whisk for a couple of minutes.
Add the hot milk and thicken over low heat, continuing to stir for 10 minutes.
Finally, add the nutmeg, gorgonzola, adjust the salt and turn off the heat. Set the béchamel aside.
Cook the penne in plenty of salted water and drain them when they are still al dente.
Put the pasta in a bowl, add the béchamel and half of the speck cubes, then mix everything.
Pour the pasta into an oven-safe baking dish. Level the pasta, add the gorgonzola pieces and the remaining speck. Sprinkle with grated Grana Padano and bake in a preheated oven at 390°F for 15 minutes.
If you prefer to cook it in an air fryer, as I did, set it to 375°F for 10 minutes.
