Eggs with Tomato

Eggs with tomato, a tasty yet very simple and economical dish, which, served with croutons, solves a dinner in a few minutes. It is a traditional dish of simple cuisine, I make it when I don’t have much time to put dinner on the table and with little effort I make everyone happy.

Making this dish is really easy: tomato sauce, eggs, and very few other ingredients will suffice to prepare it, but don’t forget to serve it with nice slices of bread for dipping!

I like my eggs with the yolk still soft, but the white well cooked. Choose the degree of cooking you prefer based on your taste.

Ingredients

  • 4 eggs
  • 18 oz tomato sauce
  • Half onion
  • 1 drizzle extra virgin olive oil
  • chopped parsley
  • salt

How to Prepare Eggs with Tomato

  • Peel the onion, chop it into pieces and sauté it in a pan with a drizzle of oil for a minute.

    Add the tomato sauce, a pinch of salt, and let it cook for 10 minutes with the lid on.

    Break the eggs and add them to the tomato, cover and continue cooking for a few minutes, until you reach the preferred degree of doneness. Add a pinch of salt on the eggs, sprinkle with chopped parsley, and serve with a nice slice of bread.
