How to grill a lot of eggplants in an air fryer to make eggplant parmigiana? The solution is very simple: with wooden skewer sticks!
I often find myself having to grill eggplants for a side dish or the classic parmigiana. By skewering them, you can make quite a few in one cooking session, whereas the space on the tray is limited. That’s why from today I will always do it this way.
You don’t even have to measure the skewers because, being wooden, if they’re too long, you can cut the tip with a quick knife stroke, and they’ll fit perfectly in your fryer.
Once cooked, you can simply season them with oil, salt, and parsley, or use them as a base for other dishes.

How to Grill a Lot of Eggplants in an Air Fryer
First, check that the skewers fit into the drawer of your fryer. If not, cut an end with a quick knife stroke.
Wash and dry the eggplants, then cut them into not too thin slices. Skewer them, leaving some space between each, and spray with oil.
Try to arrange them well, so there’s space between each slice, ensuring even cooking.
Cook at 356°F for 15 minutes. I didn’t turn them because with my fryer it’s not necessary, but after 10 minutes you can do so and continue cooking.
Once cooked, remove the skewers and proceed with your preferred preparation, such as Air Fryer Eggplant Parmigiana.
