Zucchini alla Scapece in Air Fryer

Zucchini alla Scapece are a fresh and summery dish typical of the Neapolitan tradition. They are fried zucchini, then marinated with vinegar and aromatic herbs, in this case lightened by air fryer cooking. A real delight!

Ingredients

  • 1.1 lbs zucchini
  • 2 tbsp extra virgin olive oil
  • 2 tbsp white wine vinegar
  • Half clove garlic
  • mint (or parsley)
  • salt
  • pepper

How to Prepare Zucchini alla Scapece in Air Fryer

  • Wash the zucchini, slice them thinly, and place them in a bowl. Add a drizzle of oil, stir, and place them in the air fryer basket directly on the grill.

    Cook for 15 minutes at 392°F, turning them halfway through cooking.

    Once cooked, place them in a baking dish, add a pinch of salt, and season with vinegar, a splash of oil, garlic, and parsley or mint.

    Let the zucchini rest in the fridge for at least an hour before eating.

Storage

You can store zucchini alla scapece in the refrigerator, in a closed bowl for up to three days.
