Ingredients
- 1 roll shortcrust pastry
- 1 egg
- 1 bell pepper (small)
- 1 eggplant (small)
- 1 zucchini (small)
- 1 tomato
- Half onion
- 1 tablespoon grated Parmesan cheese
- 1 mozzarella
- 3.5 oz mortadella (in one slice)

How to prepare the Savory Vegetable Tart in Air Fryer
Prepare (if you haven’t already) the zucchini, eggplant, and bell pepper on the grill. Once the vegetables are cooked, cut them into pieces.
Sauté the sliced onion in a pan with the chopped tomato and add the grilled vegetables. Cook for about 5 minutes, season with salt, then let them cool.
In the meantime, cut the mortadella into strips and place it in a bowl. Add an egg, the Parmesan cheese, and whisk well. Also, add the now lukewarm vegetables and mix the mixture.
Line the pie pan with the shortcrust pastry and pour the filling inside, folding the edges inward.
Bake in the air fryer at 320°F for 25 minutes, covering the tart with a sheet of aluminum foil, then remove it and continue cooking for another 5 minutes.
At this point, add the mozzarella strips and continue cooking for a few more minutes, so that the mozzarella browns.
Cooking times may slightly vary depending on the model of air fryer you own, always check the cooking.
