Zucchini and Ricotta Meatballs in Air Fryer

Zucchini and Ricotta Meatballs in Air Fryer are a very light dish that you can prepare in a few minutes. You can serve these meatballs as a main course or as finger food for a delicious appetizer with friends.

It’s a very simple recipe with few ingredients, just the way I like it. Just grate the raw zucchinis and add them to the meatball mix.

Ingredients

  • 9 oz zucchini
  • 9 oz ricotta
  • 1 cup breadcrumbs
  • 1 egg
  • salt
  • as needed breadcrumbs (for final breading)

How to prepare Zucchini and Ricotta Meatballs in Air Fryer

  • In a bowl, place the ricotta, the egg, and a pinch of salt. Grate the zucchini (if they contain a lot of water, I recommend squeezing them) and add to the mixture, finally add the breadcrumbs little by little and mix well, until you get a workable mixture.

    Shape the meatballs by taking a bit of the mixture, rounding it, and slightly flattening it with your hands.

    Put some breadcrumbs on a plate and coat the meatballs on both sides. Place them in the basket of the air fryer with parchment paper at the bottom and cook the zucchini meatballs at 340°F for 20 minutes.
