Cat’s Tongue Cookies

Cat’s Tongue Cookies are thin cookies made with only egg whites and rich in butter, very tasty and easy to make in just a few minutes.

When I make custard or a preparation that requires only yolks, I use the leftover egg whites in this way. They are truly delicious cookies that you can enjoy with both tea and ice cream.

They differ from usual cookies because they are not made from shortcrust pastry (even if the ingredients are the same) but from a creamy, butter-rich dough called “cigarette dough.”

They owe their name to their elongated, thin, and slightly rough shape, reminiscent of a cat’s tongue.

Ingredients

  • 3/4 cup all-purpose flour
  • 3 egg whites
  • 3/4 cup powdered sugar
  • 7 tbsp butter (at room temperature)

How to make Cat’s Tongue Cookies

  • Using a whisk, work the softened butter with the powdered sugar until you obtain a smooth cream.

    Add half of the egg whites and half of the flour, and mix well before adding the rest. Once you have a cream, put it in a piping bag and form the cat’s tongues on a baking sheet lined with parchment paper.

    Leave them well spaced apart because they flatten and spread a lot during baking.

    Bake in a preheated oven at 350°F for about 12 minutes. When the edges slightly darken, the cookies are ready.

Notes

To keep the parchment paper steady while making the cookies, put a little water or batter on the four corners of the baking sheet and place the parchment paper on top. This way, the batter will act as glue, and the paper won’t move.

If you want to give your cookies a rolled shape, as soon as they come out of the oven while they are still malleable, you can wrap them around the handle of a wooden spoon.
