Preparation
Wash the lemon and grate the zest.
With the help of a food processor, chop the sandwich bread together with the peeled garlic clove and parsley.
Transfer the mixture to a plate, add the lemon zest, a pinch of salt and pepper (1).
Separate and clean the chicken breast by removing any small bones and cartilage.
Cut it into cubes of regular size.
Put the pieces in a bowl, season them with extra virgin olive oil and the squeezed lemon juice (1).
Roll the chicken pieces in the aromatic mixture so that they are breaded on all sides.
Skewer the pieces on bamboo skewers (or metal if you prefer).
