Eggplant Strips in Air Fryer

Eggplant strips in air fryer, a fresh and light side dish, ideal for the summer season, very easy to prepare. The eggplants cooked and seasoned in this way are delicious either on their own as a side dish to a meat plate or on a bruschetta.

Since I got my air fryer, I often prepare both eggplants and peppers because they cook quickly and are practically hassle-free. They can also be made in the oven, but with the air fryer, it’s much faster: it doesn’t even need preheating, so I save time, money, and can cook whatever I want!

But now back to the eggplants: I usually cook three at a time and if I use one for eggplant meatballs, with the remaining ones I make this side dish, which pairs with any dish.

How to Prepare the Eggplant Strips in Air Fryer

  • Wash the eggplants, poke them with a fork tip, then cook them in the air fryer for 25 minutes at 374°F.

    When they are cooked, let them cool, then cut them in half, discard the skin, and slice the pulp into strips.

  • Place them in a bowl and season with garlic, parsley, oil, salt, and pepper. Mix well and store in the fridge until serving.

Cooking times may slightly vary depending on the model of the air fryer you own, always check the cooking.
