Homemade Pizza Dough is one of the simplest yet most delicious preparations in Italian cuisine. Perfect for a family night or with friends, pizza on our tables, especially over the weekend, is a must.
This pizza dough is easy to work with, and it’s perfect to prepare in just a few hours and top as you like. With the indicated amount of yeast, rising takes about 4 hours, depending on the room temperature.
A little trick: the secret to achieving a crispy bottom and soft top pizza is not to use parchment paper. I don’t put oil in the dough but instead put it on the pan before spreading the dough. This way, the base stays crispier!
With these measurements, you’ll get dough for a baking tray, and it will bake in about 25 minutes.

Ingredients for a 12×16 inch tray
- 2 1/3 cups all-purpose flour
- 1 2/3 cups Manitoba flour
- 1 1/3 cups water
- 2 tsp fresh yeast
- 2 tsp salt
How to prepare Pizza Dough
Place the water and the flours in the stand mixer bowl. Start mixing with the hook and add the crumbled fresh yeast.
After 2-3 minutes, add the salt and continue to knead until you get a smooth dough (it will take at least 5 minutes). Shape it into a ball with your hands and let it rest in an oiled bowl.
Cover the dough with a clean cloth and let it rise in a warm place, away from drafts. It should rise for about 4 hours, depending on room temperature, but wait until the dough’s volume has doubled. Ideally, place it in the turned-off oven with the light on.
Roll out the dough on the tray and top as desired.
