Crystallized Dog Rose Petals

Crystallized Dog Rose Petals can be used in desserts or to decorate cakes because they are very lovely to look at.

While strolling in the greenery, I made a pleasant discovery—enormous bushes of dog rose. The dog rose, also known as wild rose or briar rose, is a spontaneous rose very common in the undergrowth and countryside. The flowers are beautiful and very fragrant but also delicate, and since it is an edible flower, I wanted to try this experiment.

The process is simple and the taste is very particular. I used them for these soft cupcakes with dog rose petals and raspberries which are a delight, but you can simply use them as decoration for desserts.

The important thing is to use only untreated roses!

Ingredients

  • 6 roses
  • 1 egg white
  • 2 tablespoons sugar

How to Make Crystallized Dog Rose Petals

  • Gently detach the rose petals from the flower and wash them gently in very cold water. Let them dry on a clean tea towel.

    In a small plate, beat an egg white well and in another plate put the sugar.

    Dip the petals gently first in the egg and then coat them with sugar both front and back.

    Place all the petals on a tray well separated from each other and let them dry in the air for at least 24 hours.

    If you prefer, you can also place the petals on a baking sheet lined with parchment paper and dry them in the oven for 15 minutes at 212°F, leaving the door ajar.
