How to cook whole eggplants in an air fryer? It’s quick and very simple, you’ll get soft eggplants that you can use as a base to get creative with many dishes: sides, starters, main courses, and first courses.
When I cook eggplants with this method, I often prepare Eggplant Balls, spreadable cream for crostini, or baba ganoush. They’re also delicious just cut into strips and seasoned with oil and garlic for a quick summer side.
It’s a very easy recipe that you can prepare much faster in an air fryer than in the oven, and there’s no need for preheating!

How to Prepare Whole Eggplants in Air Fryer
Wash the eggplants, dry them, and pierce the surface on both top and bottom with a fork.
Place the eggplants in the air fryer and set the temperature to 374°F and the timer to 15 minutes. Turn the eggplants and continue cooking for another 5 minutes.
Let the eggplants cool, peel them, and use them as you prefer.
