Eggplants with Tomato Sauce and Olives in Air Fryer

Eggplants with Tomato Sauce and Olives are a tasty second course to be served either hot or at room temperature that you can prepare in an air fryer. The advantage of this tool is that it allows us to use less fat and cooks faster compared to a traditional oven.

Obviously if you don’t own an air fryer, you can also cook eggplants in the oven by increasing the cooking time, at the end of the recipe you will find all the instructions.

This simple dish made with few ingredients is also very flavorful and will please the whole family. It’s ideal in summer when eggplants are in season, but since you can always find them at the supermarket, you can prepare it all year round.

Ingredients

  • 2 eggplants
  • 1 cup tomato sauce
  • 1/4 cup Grana Padano cheese, grated
  • 8 olives
  • chopped parsley
  • 1 drizzle olive oil
  • salt

How to Prepare Eggplants with Tomato Sauce and Olives in Air Fryer

  • Wash the eggplants, remove the stem and cut them in half lengthwise.

    With a knife, score the flesh almost to the bottom and add some salt and a drizzle of oil. Place them in the air fryer basket and cook at 340°F for 20 minutes.

    When the eggplants are cooked, press the flesh with the back of a spoon and add 2 tablespoons of sauce on each, spreading it to the edges, 2 olives cut in half, some parsley, and a tablespoon of grated grana cheese.

  • Put the drawer back in the fryer and cook for another 5 minutes at 355°F to gratinate.

    Serve the eggplants hot or if you prefer at room temperature.

Notes

Store the eggplants in the fridge, closed in an airtight container for a maximum of a couple of days.

  • Can I also cook this dish in the oven?

    Of course! Bake the eggplants at 375°F for 30 minutes, proceed with the recipe and gratinate them for another 6-7 minutes at 390°F.
