Perch with Vegetables in Air Fryer

The Perch fish fillets with vegetables cooked in an air fryer are tender and juicy inside. Just a few minutes to prepare both main and side dishes, all in one quick yet tasty plate.

I prepared this dish a bit by chance, on one of those nights when I didn’t have much time to devote to dinner and opened the fridge seeking inspiration. I saw the fish fillets, some cherry tomatoes, and a zucchini. In the pantry, there was a potato and an onion, and I thought: why not throw it all in the fryer.

Well, I didn’t expect it to turn out such a good dish! The fish remains juicy inside and I really liked the combination with the vegetables!

Ingredients

  • 1 lbs Perch fish (fillets)
  • 1 potato
  • 1 zucchini
  • 5 cherry tomatoes
  • 1 onion (small)
  • 1 tbsp extra virgin olive oil
  • chopped parsley
  • salt
  • pepper

How to prepare Perch fish fillets with vegetables in an air fryer

  • Peel the potato and cut it into pieces, do the same with the onion and zucchini and place them in a bowl. Season with salt, pepper, and oil, toss the vegetables and place them in the fryer basket. I didn’t use parchment paper.

    Cook for 15 minutes at 356°F, shaking the basket halfway through cooking to move the vegetables.

  • In the meantime, remove the skin from the perch fillet (if it has it) and cut it into pieces. Cut the cherry tomatoes into quarters, place them in the same bowl where you seasoned the vegetables, add the fish, season with salt and parsley, mix with a spoon and once the timer goes off, add them to the vegetables.

    Still cook at 356°F for another 15 minutes, check if the salt is right, and divide on serving plates. Serve hot.
