These savory croissants can also be prepared in advance and frozen raw, so they are always ready and can be cooked as needed. Just let them thaw on a baking sheet lined with parchment paper and cook them as indicated in the recipe.
The filling is very tasty: the combination of goat cheese and walnuts is spectacular, and if you prefer a milder flavor you can use cow’s milk goat cheese or robiola.

- 1 roll puff pastry (round)
- 7 oz goat cheese (goat)
- 10 walnuts
- black sesame seeds
- 0.25 cup milk (for brushing)

How to Prepare Savory Croissants with Goat Cheese and Walnuts
Shell the walnuts and chop them coarsely.
Unroll the puff pastry and leave it on its parchment paper. Cut it into 4 and cut each quarter into 3 smaller wedges, thus obtaining 12 triangles.
Stuff the wide part of each croissant with some cheese and walnut pieces. Once you have done them all, brush the edges with a bit of milk and roll the pastry triangles from the wide part to the tip.
Place the savory croissants on a baking sheet lined with parchment paper, brush them with milk and sprinkle them with black sesame seeds.
Bake in a preheated convection oven at 350°F for about 20 minutes, until golden brown.
