The Surimi Salad with Red Onion and Cherry Tomatoes is a fresh and quick appetizer to prepare because it requires no cooking. Besides being colorful, it is also an economical dish, which should not be underestimated in this period!

With the arrival of the holidays, my family starts the frantic search for dishes to bring to the table. We are always looking for something different, to not eat the same things all the time and also to not always have the usual puff pastry appetizers.

This nice fresh salad is really enjoyable to eat and you can choose whether to serve it in individual cups or make a single serving dish from which each guest can help themselves.

For this dish, I used surimi sticks sold in the supermarket’s refrigerated section.

This is a very simple yet flavorful salad that everyone will like.

Ingredients

  • 10.5 oz surimi
  • Half red onion
  • 12 cherry tomatoes
  • 1 bunch parsley
  • Half lemon
  • extra virgin olive oil
  • salt

How to Prepare Surimi Salad with Red Onion and Cherry Tomatoes

  • Start by washing the parsley, dry it well, and chop the leaves with a knife or food processor.

    Quarter the cherry tomatoes, slice the onion, and put everything in a large bowl.

    Cut the surimi sticks into pieces, add them to the cherry tomatoes, and season with salt, a bit of extra virgin olive oil, and the juice of half a lemon. Finally, add the chopped parsley and mix the salad well.

    Leave it in the fridge for at least an hour and then serve.

Notes

If you want to prepare this dish in advance, you can. I only recommend adding the cherry tomatoes at the last moment to prevent them from softening too much.
