Snow Peas with Tomato

Snow peas with tomato, a delicious side dish that you can prepare with tomatoes when they are in season, or with tomato sauce.

For this dish, if you can’t find fresh snow peas, you can use frozen ones, or substitute them with flat beans, which are easier to find. There is indeed some confusion between these two products… Those in the photo are flat beans, longer and narrower than snow peas, which have a sweeter taste but are cooked the same way, so don’t worry, whatever you find in the supermarket is fine!

This dish was made by my mom when I was little, it’s a very simple side dish from the old days but at the same time tasty, which you can pair with both meat and fish mains.

Ingredients

  • 1.1 lbs snow peas
  • 1 cup tomato sauce
  • Half carrot
  • onion
  • Half stalk celery
  • 2 tbsps extra virgin olive oil
  • salt

How to Make Snow Peas with Tomato

  • Wash the snow peas, remove the ends, take off the central string, and cut them into pieces.

    Dice the celery, carrot, and onion into small cubes and sauté them with a little oil in a large pan. After a couple of minutes, add the snow peas, tomato sauce, and adjust the salt.

    Cook on low heat with a lid for about 15 minutes, stirring occasionally. If the sauce dries out too much, add a couple of tablespoons of water and finish cooking. Serve the snow peas hot.

    Put the snow peas in the fridge, in an airtight container, for a maximum of a couple of days.

  • Can I use fresh tomatoes instead of sauce?

    Sure, both tomatoes and cherry tomatoes are fine. Cut them into pieces and proceed in the same way.
