Quinoa with chickpeas, feta, and cherry tomatoes is a very tasty cold dish, no cooking required, perfect for serving in the summer season.   • 14 oz cherry tomatoes
  • 1 avocado
  • 3.5 oz feta
  • 2 tbsps extra virgin olive oil

How to Prepare Quinoa with Chickpeas, Feta, and Cherry Tomatoes

  • Remove the peel from the avocado, cut the flesh into pieces, and place it in a bowl. Add the drained chickpeas, quinoa, crumbled feta with your fingers, and quartered cherry tomatoes. Drizzle with a little olive oil and mix well to combine all the ingredients. Refrigerate until ready to serve.
