Quinoa with chickpeas, feta, and cherry tomatoes is a very tasty cold dish, no cooking required, perfect for serving in the summer season. I like this kind of preparation, and I often eat it because it’s quick to make, and by substituting a couple of ingredients, you can have a different dish every time. For example, you can replace chickpeas with edamame or cannellini beans; cherry tomatoes with sun-dried tomatoes; quinoa with couscous or a mix of grains.
These are just ideas, remember that in cooking you should unleash your creativity and use your imagination, take inspiration from this recipe and create a dish suitable for you and your family!
