Pasta and Potatoes

Pasta and potatoes is a simple yet delicious first course from the Italian tradition.

A humble but very tasty dish, with a velvety creaminess that binds the ingredients together.

I usually prepare this dish with the classic pan, but today I wanted to try making it with the help of my Ken. Result: spectacular creaminess!

Ingredients

  • 11.3 oz mixed pasta
  • 4.2 cups water
  • 3 potatoes
  • Half onion
  • 1 carrot
  • 3.5 oz tomato puree
  • 3.5 oz Grana Padano cheese, grated
  • 2 tbsp extra virgin olive oil
  • 2 tbsp vegetable stock cube
  • salt
  • pepper

How to Prepare Pasta and Potatoes

  • Chop the carrot and onion with a knife and put them in a pot along with the oil over medium heat.

    Sauté for a few minutes, then add the peeled and chopped potatoes, the stock cube, the tomato puree, and the water. Cook covered for 20 minutes, stirring occasionally.

    Add the pasta and continue cooking for the time indicated on the package, always stirring occasionally. If it becomes too dry, add a little water.

    When the pasta is cooked, turn off the heat, adjust the salt and pepper, add the cheese, and mix to combine everything. Divide into plates and serve the pasta and potatoes hot.

  • Chop the carrot and onion in the food processor and place them in the bowl along with the oil.

    Mount the splash guard, the mixer, the cover, and cook: 248 degrees Fahrenheit / 3 minutes / stir 2.

    Add the peeled and chopped potatoes, the stock cube, the tomato puree, and the water. Cook covered 217 degrees Fahrenheit / 20 minutes / stir 2.

    Add the pasta and continue cooking for the time indicated on the package. If it becomes too dry, add a splash of water.

    Set the temperature to zero, adjust salt and pepper, add the cheese, and mix: 1 minute / stir 1.

    Divide into plates and serve the pasta and potatoes hot.
