Yogurt Cake with Concord Grapes

The Yogurt Cake with Concord Grapes is a simple dessert suitable for a snack or breakfast. It is a soft cake with a butter-free batter, enriched with yogurt and oil, to which very fragrant Concord grapes are added.

You can prepare this cake simply with an electric mixer, but I made it with the help of my indispensable Ken I can’t do without anymore; if you want to know the other recipes where I’ve used it, here they are:

Ingredients for a 28 cm pan

  • 3 1/4 cups all-purpose flour
  • 12 oz Concord grapes
  • 1/2 cup yogurt
  • 3 eggs
  • 1 cup sugar (Plus a tablespoon for the surface)
  • 1 packet baking powder
  • 1 tablespoon vanilla extract
  • 1/2 cup sunflower oil
  • 1 pinch salt
  • powdered sugar

How to prepare the Yogurt Cake with Concord Grapes

  • In a bowl, whisk the eggs, vanilla extract, and sugar with an electric mixer until light and fluffy, then add oil, yogurt, and continue whisking.

    Add flour, baking powder, and salt and mix everything with the electric beaters to obtain a homogeneous batter.

    At this point, add half of the grapes and mix with a spatula to incorporate them into the batter.

    Pour the batter into the cake pan lined with parchment paper or greased and floured, add the remaining grapes, sprinkle a tablespoon of sugar on top, and bake.

    Bake the cake in a static oven, preheated to 365 degrees Fahrenheit for 45-50 minutes. Check the doneness by inserting a toothpick into the cake; if it comes out dry, the cake is ready.

    Let it cool completely before dusting with powdered sugar and serving.

  • In the bowl of the Cooking Chef whisk the eggs, vanilla extract, and sugar with the wire whisk: temperature 113 degrees Fahrenheit, speed 6 for 2 minutes.

  • Reset the temperature and add to the fluffy mixture you obtained, the oil, yogurt, and continue whisking for 1 minute at speed 4.

    Add flour, baking powder, and salt and mix everything, still for 1 minute at speed 4.

  • At this point, add half of the grapes and mix with a spatula to incorporate them into the batter. Pour the batter into the cake pan lined with parchment paper or greased and floured, add the remaining grapes, sprinkle a tablespoon of sugar on top, and bake.

  • Bake the cake in a static oven, preheated to 365 degrees Fahrenheit for 45-50 minutes. Check the doneness by inserting a toothpick into the cake; if it comes out dry, the cake is ready.

    Let it cool completely before dusting with powdered sugar and serving.

Storage

Store the cake under a glass dome for up to 3 days.
