Ingredients
- 5 eggs
- 22 oz tomato sauce
- 1 tbsp Grana Padano DOP (grated)
- 3 tbsps extra virgin olive oil
- 2 tbsps soffritto mix
- parsley (chopped)
- salt

How to Prepare Eggs in Tripe – Fake Tripe in Tomato Sauce
Break the eggs into a bowl, add a pinch of salt and the grated cheese, and mix well with a fork.
Heat the oil in a pan, pour in the eggs, and cook the omelet over medium heat with the lid on for a couple of minutes, then turn it over and cook the other side for one more minute.
Let it cool on a cutting board.
In the same pan where you cooked the omelet, place the soffritto mix and cook for a couple of minutes, then add the tomato sauce, adjust the salt, and put the lid on.
Cook on low heat for 15 minutes.
Cut the omelet in half, roll it up, and slice it into strips. Put them into the sauce, add the parsley, and continue cooking for a couple of minutes.
The fake tripe is ready, serve it hot with slices of bread.
