Made with simple ingredients, it visually resembles tripe but is actually an omelet cut into strips and cooked in tomato sauce. Eggs in Tripe - Fake Tripe in Tomato Sauce
  • Difficulty: Very easy
  • Cost: Very cheap
  • Cooking time: 20 Minutes

Ingredients

  • 5 eggs
  • 22 oz tomato sauce
  • 1 tbsp Grana Padano DOP (grated)
  • 3 tbsps extra virgin olive oil
  • 2 tbsps soffritto mix
  • parsley (chopped)
  • salt

  • 1 Pan – non-stick 11-inch diameter

How to Prepare Eggs in Tripe – Fake Tripe in Tomato Sauce

  • Break the eggs into a bowl, add a pinch of salt and the grated cheese, and mix well with a fork.
    Heat the oil in a pan, pour in the eggs, and cook the omelet over medium heat with the lid on for a couple of minutes, then turn it over and cook the other side for one more minute.
    Let it cool on a cutting board.

  • In the same pan where you cooked the omelet, place the soffritto mix and cook for a couple of minutes, then add the tomato sauce, adjust the salt, and put the lid on.
    Cook on low heat for 15 minutes.

  • Cut the omelet in half, roll it up, and slice it into strips. Put them into the sauce, add the parsley, and continue cooking for a couple of minutes.

    The fake tripe is ready, serve it hot with slices of bread.
