Ingredients
- 7 oz chicken breast
- 2 tbsp peanut oil
- 1 oz peeled almonds
- 1 tbsp cornstarch (gluten-free)
- 1 tbsp soy sauce (dark gluten-free)
- 1 tbsp soy sauce (light gluten-free)
- to taste salt
- 1 tsp cornstarch
- 2/3 cup water

Procedure
Cut the chicken into cubes and place it in a bowl with a tablespoon of water.
Massage and add a tablespoon of cornstarch with another tablespoon of water, continuing to massage until the water is completely absorbed by the chicken.
Cover with plastic wrap and let it rest for 30 minutes.
Meanwhile, heat the oil in a wok and fry the almonds for a few minutes.
Remove them and set aside.
Mix a teaspoon of cornstarch in the 2/3 cup of water.
Fry the chicken breast in the remaining oil, stirring frequently.
Once it’s cooked on all sides, add 2/3 cup of water with cornstarch and the light and dark soy sauce.
When the sauce is thick, add the almonds, adjust salt if necessary, and mix well.
Serve with basmati rice.

Tips
Chicken with almonds can be stored in the refrigerator for 1–2 days in an airtight container. Freezing is not recommended as the sauce may separate.
Cut the chicken into small, even pieces.
Use a hot pan to seal the meat.
Add the almonds only at the end to keep them crunchy.
If the sauce is too thick, add some warm broth.
