The Quick Burger Rolls are the perfect solution for a tasty dinner (or lunch), original and, above all, very quick. If you love burgers but are looking for a more practical alternative to classic buns assembled at the moment, this version will win you over: they’re little parcels made from pizza dough that enclose a generous, melty core.
The true strength of this recipe is the speed. Thanks to the use of ready-made pizza dough, you can completely skip kneading times and long hours of rising. In under 30 minutes, you’ll have golden, crispy rolls with the filling perfectly incorporated, ready to be served at the table.
This recipe is extremely versatile and suitable for several cooking methods: I adore them in the air fryer, which guarantees even crisping in just a few minutes, but you can also get great results in the traditional oven or in a skillet. Below you will find all the instructions to make these super simple burger rolls and all the tips for perfect cooking, whichever method you choose.

Ingredients
- 1 roll pizza dough (ready-made)
- 14 oz ground beef
- 3 oz provola cheese, grated
- 3 oz cream cheese
- 2 tablespoons ketchup
- to taste salt

- 2 tablespoons Greek yogurt
- 1 tablespoon ketchup
- 1 tablespoon mustard

Steps
Let’s start by preparing the flavorful filling that will make our rolls unique. In a large skillet, heat a splash of extra virgin olive oil and add the ground beef. Season with salt and plenty of smoked paprika, then let it brown over medium-high heat for about 5–7 minutes, stirring often until the meat is well browned and crumbly. At this point, add the cream cheese and continue cooking for another 3 minutes, stirring well until a creamy mixture forms. Finish by adding the ketchup (optional), let it flavor for a few moments and turn off the heat, letting the mixture cool slightly.
Meanwhile, grate the provola cheese using a coarse grater so that it can melt perfectly during cooking.
Take the roll of ready-made pizza dough and divide it into 6 equal parts. In the center of each square place a generous spoonful of the meat mixture and a handful of grated provola. To close the rolls, bring all corners of the dough toward the center and form the “rolls” (they will have a slightly flattened shape).
For cooking in the air fryer, place the rolls in the basket, lightly spray with oil and cook at 356°F (180°C) for about 15 minutes, turning them halfway through for even browning. If you prefer the traditional oven, place them on a lined baking tray and bake at 392°F (200°C) for about 20–25 minutes, until golden. For cooking in a skillet, heat a little oil and cook the rolls over medium-low heat with the lid on for about 5–6 minutes per side, ensuring the dough cooks through.
While our burger rolls cook, prepare the dipping sauce: in a small bowl mix the Greek yogurt with the ketchup, mustard and a touch of smoked paprika, working until smooth. Serve the rolls hot and gooey, accompanied by the freshly prepared sauce. Enjoy!

Substitutions and Variations
The meat: If you prefer a milder flavor, you can substitute the beef with ground chicken or turkey. In that case, we recommend adding a pinch of aromatic herbs such as oregano or thyme.
The cheese: We chose provola for its ability to melt without releasing too much water, but you can also use smoked scamorza, cheddar or grated Emmental. Avoid fresh mozzarella unless very well drained, so it doesn’t overly wet the dough.
The base: If you don’t have ready-made pizza dough, you can use homemade dough as well.
Tips for a perfect result
Sealing: Make sure to pinch the dough edges well in the center when closing the rolls. This step is essential to prevent the cheese from escaping during cooking, especially in the air fryer.
Filling rest: It’s important that the meat mixture is warm rather than piping hot when you fill the dough; if it’s too hot it could soften the base too much, making closure difficult.
Storage
In the refrigerator: Stuffed burger rolls can be stored in the refrigerator, in an airtight container, for up to 1–2 days.
How to reheat: To restore crispness to the dough, we suggest warming them for 3–4 minutes in the air fryer at 320°F (160°C) or in a hot oven, extending the time as needed. Avoid the microwave, which would make the dough rubbery. Alternatively, reheat in a covered skillet over low heat.
Freezing: You can freeze them raw after assembling. When ready to eat, you can cook them directly from frozen, increasing the cooking time by about 5–8 minutes.
