- 11 oz Carnaroli rice (or Arborio)
- 1 shallot
- 2 sprigs rosemary
- 2 tbsp extra virgin olive oil
- 1 knob butter
- 1/4 cup white wine
- 6 cups vegetable broth
- 5 oz stracchino

Steps: risotto with stracchino and rosemary
Finely chop the rosemary (only the needles) and the shallot with a mezzaluna.
In a saucepan, add the oil, butter, and chopped shallot, then sauté gently over low heat. Add the chopped rosemary and stir.
Add the rice and toast it for a couple of minutes, then deglaze with the white wine, stirring.
Continue cooking for the time indicated on the package, adding hot broth a little at a time and stirring often. Adjust with salt.
At the end of cooking, remove from heat and add the stracchino in pieces, stirring vigorously until you get a very creamy risotto.
Let the risotto rest for 1 minute, then plate, decorate with chopped rosemary, add a grind of pepper (if you like) and serve immediately.
