Today I made the soft rolls with potato flakes. Do you know the mashed potato mix? Exactly that one. I buy it solely for these rolls. The potato flakes keep them soft for days. I usually prepare them for my daughter’s school snack. They’re also delicious filled like a simple sandwich. I usually make a batch and freeze them. I make roll-sized, but this recipe is perfect for a large focaccia to cut into squares later. With this dough, you can make many rolls or focaccias, your choice. You might also be interested in;

Ingredients

  • 3 1/2 cups all-purpose flour
  • 2/3 cup potato flakes
  • 1/4 cup vegetable oil
  • 1 tbsp fresh yeast
  • 1 tsp sugar
  • 1 1/2 cups water
  • 2 tsps salt

Steps

  • In the Bimby cup, I dissolved the yeast in the water with the oil and sugar.

  • I added the rest of the ingredients.

  • And I kneaded using the spike speed for 5 minutes.

  • I transferred it to a bowl and let it rise until doubled.

  • I formed balls and let them rise again for about 1 hour.

  • I pressed each ball with my fingers and added a bit of olive oil. Then I baked for 30 minutes at 400°F.
