Last minute baked pasta is a tasty, clever, easy, and quick-to-make first course.
It is a dish cooked entirely in the oven, without dirtying anything other than a baking dish since both the sauce and the pasta will cook raw and simultaneously in the dish itself. The result, with a few small adjustments, is perfectly cooked pasta wrapped in a creamy and irresistible dressing, perfect when you don’t have much time to spend in the kitchen and with ingredients almost always present in the pantry!

Ingredients
- 12 oz pasta
- 3 cups tomato puree (of good quality)
- 9 oz mozzarella
- 1 1/4 cups water
- grana cheese (or grated parmesan)
- basil
- extra virgin olive oil
- salt
Preparation of last minute baked pasta
Place a baking dish with high edges 9.5 inches in diameter on the work surface.
Pour in a bottle of good quality tomato puree (3 cups).
Add the water, a drizzle of extra virgin olive oil, some torn basil leaves, salt, and mix.Add the raw pasta, mix well so that it is submerged in the liquids.
Cover the dish with a sheet of aluminum foil, sealing it well around the edges, and bake in a preheated static oven at 390°F for half an hour.
While the pasta cooks, cut the mozzarella into cubes.After thirty minutes, remove the dish without turning off the oven.
Remove the aluminum, stir the pasta, and then sprinkle it with cubed mozzarella and plenty of grated grana or parmesan cheese.
Return the dish to the oven uncovered for another ten to fifteen minutes, until a crispy crust has formed.
Let it set for a few minutes and then serve your last minute baked pasta.
