The chickpea fritters are an easy, super quick, and delicious vegetarian recipe. I wanted to prepare some croquettes for dinner, I had some canned chickpeas, and so, in just 10 minutes and with simple ingredients we all have at home, I made this dish that was a hit! I fried them in a pan, but you can also cook these delicious chickpea fritters in the oven or air fryer, they are soft inside and crispy outside, fragrant and tasty, also perfect as an appetizer, made even in gluten-free version for those with gluten intolerance. I served them with a delicious homemade yogurt sauce, making them truly irresistible!

Ingredients
- 16.2 oz cooked chickpeas (2 cans, drained weight)
- 1/2 cup chickpea flour
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 clove garlic
- 1 sprig parsley
- 1 onion (small)
- 1 pinch baking soda
- to taste salt
- to taste black pepper
- to taste paprika
- to taste seed oil (or olive oil for frying)
Steps
Chickpea fritters are very simple and quick to prepare, first drain the canned chickpeas, rinse them well, dry them, place them in a bowl, and mash them with a potato masher.
Add chopped garlic, onion, and parsley, the egg, grated Parmesan cheese, chickpea flour, salt, baking soda, black pepper, paprika, and mix all the ingredients well, aiming for a soft and homogeneous mixture.
Take some mixture, form balls and flatten them in the palm of your hand, forming all the chickpea fritters this way.
Cook the chickpea fritters in hot seed oil (or olive oil) until golden, keep the heat medium-low and turn them halfway through cooking, they will cook in about 4/5 minutes per side.
Drain the chickpea fritters on absorbent paper and serve them; I recommend accompanying them with a fresh and light yogurt sauce, preferably homemade (how to prepare it? Mix unsweetened yogurt, a drizzle of oil, a tablespoon of lemon juice, chives, salt, pepper, and a clove of chopped garlic) 🙂
Tips:
The chickpea fritters can be kept at room temperature for a few hours or in the fridge for 2/3 days. Instead of chickpea flour, you can use all-purpose flour, but I chose chickpea flour to make the patties even tastier and gluten-free. You can also bake them in a preheated oven at 350°F for about 20 minutes or in an air fryer at 350°F for 15 minutes, drizzling a little oil on top before baking.
