You know I love phyllo dough and use it often; this time, I’ve used it to prepare a delightful rustic pie with a gooey filling. It’s ready in a few minutes, and you can bake it either in the oven or in the air fryer, and it’s super convenient because you won’t even need to boil the pumpkin first; use it directly raw! Crispy on the outside and soft on the inside, pumpkin phyllo pie is perfect as an appetizer, main course, or even for an aperitif, one piece leads to another, it’s too good!

Ingredients
- 9 oz pumpkin
- 5 oz scamorza cheese
- 3.5 oz speck
- 1/3 cup milk
- 1.75 oz Parmesan cheese
- 2 tbsps extra virgin olive oil
- 2 eggs
- 2 packages phyllo dough
- to taste salt
- to taste black pepper
- to taste rosemary
Steps
The pumpkin and speck phyllo pie is very simple and quick to prepare. First, prepare the batter by mixing milk, eggs, extra virgin olive oil, salt, and black pepper.
Clean the pumpkin, remove the skin, and grate it with a coarse grater. Grate the scamorza cheese the same way, add grated Parmesan cheese, diced speck, salt, chopped rosemary, and mix all the ingredients well.
Cut one roll of phyllo dough into strips about 3/4 inch wide and separate them. Arrange the phyllo dough in a baking tray lined with parchment paper and pour half of the batter over it.
Add the pumpkin and speck filling and cover with the second roll of phyllo dough, also cut into strips, then pour the remaining batter on top.
Bake the pumpkin phyllo pie in a preheated oven at 356°F (180°C) for 20/25 minutes until it is well browned on the surface.
Advice:
The pumpkin and speck phyllo pie keeps at room temperature for a few hours or in the fridge for a couple of days. To make it crispy as if freshly made, heat it in the oven or in the air fryer. For a vegetarian version, omit the speck. You can also add a cheese of your choice, such as gorgonzola, Brie, taleggio, or other.
