Pistachio crunchies are delightful no-bake treats that are ready in 5 minutes with only 3 ingredients: cornflakes, pistachio cream, and white chocolate. I named them this way because they are crunchy and delicious, perfect for after meals, breakfast, or a snack, ideal even for Christmas festivities, with a tray of these you can’t go wrong, zero fuss and 100% delight, you can also prepare them in advance as they keep well and are perfect even as gifts!

Ingredients
- 7.1 oz white chocolate
- 3.5 oz pistachio cream
- 3.5 oz corn flakes
- as needed white chocolate (for decoration)
- as needed pistachios for decoration
Steps
Pistachio crunchies are super easy and quick to make, first melt the white chocolate in the microwave or in a double boiler, add the pistachio cream (you can also make it at home with my recipe HERE) and mix.
Add the cornflakes and mix everything well.
Fill muffin cups with some of the mixture (I used those in silicone) press well and decorate the top with some melted white chocolate (I used 0.7 oz) and chopped pistachios.
Let the pistachio crunchies rest at room temperature for about half an hour or in the fridge for about fifteen minutes, so they solidify well.
Tips:
Pistachio crunchies can be stored at room temperature for up to ten days. If you prefer, you can use milk or dark chocolate instead of white chocolate.
