Oven-Baked Autumn Vegetables

The oven-baked autumn vegetables au gratin is a vegetarian recipe that is easy, quick, simple, and delicious. I had some vegetables in the fridge and pantry to cook, so I thought of using them all together to prepare a nice tray of autumn and winter vegetables, a tasty, light, and flavorful side dish (but also appetizer or main course). My little girls loved them too, they cook with little oil and you don’t even have to parboil them, do everything raw, dirtying only one baking dish and into the oven (or air fryer), a few minutes of cooking for a delicious and nutritious seasonal dish!

Ingredients

  • 1 3/4 cups pumpkin
  • 1 cup broccoli
  • 1 cup cauliflower
  • 1/4 cup Parmesan cheese
  • 2 onions (small)
  • 1 potato (medium)
  • to taste extra virgin olive oil
  • to taste salt
  • to taste black pepper
  • to taste spices
  • to taste breadcrumbs

Steps

  • The oven-baked autumn vegetables are very simple and quick to prepare, first peel the potato, pumpkin, and onions and slice them thinly, about 1/8 inch. Clean the broccoli and cauliflower and detach small florets.

  • Place all the vegetables in a baking dish lined with parchment paper and season them with salt, black pepper, spices to taste (I used garlic powder, sweet paprika, onion powder, and parsley), grated Parmesan cheese, a drizzle of extra virgin olive oil and mix, distribute the vegetables evenly, trying not to overlap them too much.

  • Season the vegetables with a bit of breadcrumbs, a drizzle of oil and bake in a preheated oven at 390°F for about 30 minutes, they should be golden, poke them with a fork to check doneness.

Tips:

The oven-baked autumn vegetables can be stored at room temperature for a few hours or in the fridge for a couple of days. You can use/add other vegetables as you like such as carrots, Brussels sprouts, and fennel. You can also cook them in an air fryer at 375°F for about 25 minutes.
