The lemon meatballs are creamy, fragrant, and very soft meatballs without potatoes, cooked in a pan and accompanied by a delicious sauce. I had some ground meat to cook, and I immediately craved meatballs, so I used some fresh lemons from my tree to flavor them and create a creamy sauce to serve with them. The whole family loved them! The lemon meatballs are very tender, with the perfect mixture to make them soft, a perfect meat main course to prepare in just a few minutes with few and simple ingredients!

Ingredients
- 1.1 lbs ground meat
- 3.5 oz stale bread
- 0.2 cup milk
- 0.44 cup Parmesan cheese
- 2 cloves garlic
- 2 sprigs rosemary
- 1 sprig parsley
- 1 lemon (large)
- 1 egg
- as needed extra virgin olive oil
- as needed salt
- as needed black pepper
Steps
Lemon meatballs are very simple and quick to prepare. First, place the ground meat, grated Parmesan cheese, crumbled stale bread, milk, egg, minced garlic, and parsley, salt, pepper, and grated lemon zest in a bowl and knead. You should get a soft and homogeneous mixture.
Take some of the mixture with your hands, form balls, slightly flatten them, and flour the meatballs.
Pour some oil into the pan, enough to cover the entire base, and fry the rosemary and garlic clove. Remove the garlic and rosemary and cook the meatballs for 4/5 minutes per side until they are slightly golden.
As soon as they are well-browned, add the lemon juice, a sprig of rosemary, and a garlic clove (you can put the ones you used before for the sauté) and let the lemon meatballs cook, covered, for 5 minutes on medium-low heat. Turn them over and continue cooking for another 5 minutes.
Serve the lemon meatballs with their cooking sauce.
Tips:
Lemon meatballs can be stored in the fridge for a couple of days. Instead of bread, you can use sandwich bread or breadcrumbs. For a lighter version, you can bake the meatballs in the oven or air fryer (at 356°F for 15/12 minutes) and then finish cooking them in a pan with lemon juice.
