I saw this recipe in several videos on foreign Instagram channels (obviously topped with ingredients that are not exactly Italian and appetizing), so I wanted to try it, and I have to say it’s really good! The pizza crepe is a clever no-knead recipe, not because there isn’t any dough, but because it’s not the classic pizza dough. You make it in 2 minutes with a hand whisk and it’s yeast-free, so nothing needs to rise. You can customize it with the ingredients you prefer! The pizza crepe can be served either in slices or rolled, ideal as an appetizer, second course, or main dish, perfect even for a party or buffet, it will be a hit!

Ingredients
- 1.7 cups milk
- 1.2 cups all-purpose flour
- 1.75 tbsp extra virgin olive oil
- 2 eggs
- to taste parsley
- to taste salt
- to taste black pepper
- 1 cup cherry tomatoes
- 5.3 oz scamorza cheese
- 3.5 oz speck
- 1.75 oz Taggiasca olives
- 1.75 oz Parmesan cheese
Steps
The pizza crepe is very easy and quick to prepare. First, put the milk, flour, eggs, extra virgin olive oil, chopped parsley, salt, and black pepper in a bowl, and mix with a hand whisk, there should be no lumps.
Transfer the mixture into a lightly greased non-stick baking pan (or lined with parchment paper, if you prefer) and top the surface with the ingredients you prefer. I added cherry tomatoes, Taggiasca olives, speck, grated Parmesan, and scamorza cheese.
Bake the pizza crepe in a preheated oven at 356 degrees Fahrenheit for about 30 minutes; it should be golden brown.
Once cooked, cut the pizza crepe into slices and serve as is, or rolled up like classic crepes.
Tips:
The pizza crepe can be stored at room temperature for a few hours or in the fridge for a couple of days. You can enrich it with ingredients of your choice, vegetables for a vegetarian version, tuna, corn, onions, smoked salmon, and so on.
