Pumpkin Sticks

Baked pumpkin sticks are a simple, super quick, and tasty recipe. It’s October now, and it’s pumpkin time (and I love it, so get ready because I’ll use it in many recipes), and I couldn’t start without an easy and delicious recipe like these pumpkin sticks, perfect as a side dish, appetizer, or a vegetarian main course, but also vegan, egg-free, with a flavorful and spicy batter that makes them super crunchy even though they are not fried. You can also cook them in an air fryer. Make plenty because they will be gone in no time!

Ingredients

  • 1.1 lbs pumpkin
  • 0.53 cups water
  • 0.63 cups all-purpose flour
  • to taste salt
  • to taste spices
  • to taste extra virgin olive oil

Steps

  • Baked pumpkin sticks are very simple and quick to prepare. First, clean the pumpkin, peel it, cut it into slices about an inch thick, and then into sticks, salt them.

  • Prepare the batter by mixing water, flour, and spices to taste. I used rosemary, garlic powder, and paprika.

  • Dip the pumpkin sticks in the batter (you can do them one by one or just put them all in and stir) and then coat them with breadcrumbs.

  • Place the pumpkin sticks on a baking sheet, drizzle with a little extra virgin olive oil, and bake in a preheated oven at 392°F for about 25 minutes until golden.

Tips:

Baked pumpkin sticks can be stored at room temperature for a few hours or in the fridge for a couple of days. For the batter, you can use the spices you prefer. If you want, you can also cook them in an air fryer at 392°F for about twenty minutes, always spraying them first with a little oil.
